Mexican Garlic Shrimp

This is a Mexican recipe. Ingredients for this recipe are pretty simple. You can add thyme if you want to enhance the flavor. It can be taken as it or with rice/pilaf

INGREDIENTS

  • 40 medium shrimps with shells
  • 15 cloves garlic (3 whole & 12 minced fine)
  • 3/4 tsp salt
  • 3/4 tsp pepper
  • 3/4 tsp white vinegar
  • 3 tbsp olive oil
  • 5 tbsp butter
  • 3 tbsp lime juice

DIRECTIONS

  1. Split shrimp down in the middles without separating them completely starting the underside
  2. Remove any dark veins
  3. In a blender, puree whole garlic cloves, salt & pepper and vinegar
  4. Marinate shrimps in mixture for 30 minutes
  5. Heat oil and butter in pan
  6. Add minced garlic and saute till brown (3 minutes)
  7. Add shrimps with shell side up
  8. Lower heat, cover and cook for 2 to 3 mins or till shrimps turn opaque
  9. Sprinkle with lime juice and remove from heat
